Pecan Pie Muffins




These are delicious and really taste like pecan pie. With just six ingredients, they're also easy as, well, pie!

Pecan Pie Muffins

1 cup packed brown sugar
1/2 cup all-purpose flour
1 cup chopped pecans
2/3 cups butter, softened
2 eggs, beaten
1/4 teaspoon vanilla extract

Stir together sugar, flour and pecans. In separate bowl beat butter, eggs and vanilla until smooth. Stir wet ingredients into dry ingredients until just combined. Fill muffin cups 2/3 full. Bake at 350 degrees for 20-25 minutes.
Makes 8-10 muffins
