
Cornbread Recipe by Linda Hutchinson
My children call this "Mommy's warm bread oatmeal". Warm bread is what they call corn bread.
Mommy's Warm Bread Oatmeal
4 warm bread muffins*
splash of milk
pinch cinnamon
2 teaspoons sugar**
Put two muffins in each bowl. Add a splash of milk (to make an oatmeal-like consistency). Using a fork, mash the muffins and milk until you reach the desired consistency. Add a pinch of cinnamon (to taste). Add a teaspoon of sugar to each bowl. Stir and serve!
Serves 2 small children
On especially cold mornings you might like to eat this warm. Simply use heated milk instead of milk straight from the fridge.
*Currently, I use the Jiffy cornbread mix. I have three young children and don't have time for fancy cornbread!
**Any kind you like. Most of the time I use white table sugar. Brown sugar would probably be delicious in this recipe. Honey might work, too! If you experiment with different sweeteners, make sure to let me know your results!
