In another bowl, mix together egg, melted butter and milk. Stir the wet ingredients into the dry ingredients just until combined. Fill muffin tins 2/3 full and top with 1/2 teaspoon of favorite jam or jelly. With just six ingredients, they're also easy as, well, pie!&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Pecan Pie Muffins&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;1 cup packed brown sugar&lt;br /&gt;1/2 cup all-purpose flour&lt;br /&gt;1 cup chopped pecans&lt;br /&gt;2/3 cups butter, softened&lt;br /&gt;2 eggs, beaten&lt;br /&gt;1/4 teaspoon vanilla extract&lt;br /&gt;&lt;br /&gt;Stir together sugar, flour and pecans. In separate bowl beat butter, eggs and vanilla until smooth. Stir wet ingredients into dry ingredients until just combined. Fill muffin cups 2/3 full. Add a splash of milk (to make an oatmeal-like consistency). Using a fork, mash the muffins and milk until you reach the desired consistency. Add a pinch of cinnamon (to taste). Add a teaspoon of sugar to each bowl. Stir and serve! &lt;/div&gt;&lt;div&gt;&lt;strong&gt;&lt;em&gt;Serves 2 small children&lt;/em&gt;&lt;/strong&gt;&lt;/div&gt;&lt;br /&gt;&lt;br /&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;On especially cold mornings you might like to eat this warm. Simply use heated milk instead of milk straight from the fridge. &lt;/div&gt;&lt;br /&gt;&lt;br /&gt;&lt;div&gt;&lt;/div&gt;&lt;br /&gt;&lt;br /&gt;&lt;div&gt;*Currently, I use the Jiffy cornbread mix. I have three young children and don't have time for fancy cornbread!&lt;/div&gt;&lt;br /&gt;&lt;br /&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;**Any kind you like. Most of the time I use white table sugar. Brown sugar would probably be delicious in this recipe. Honey might work, too!
